The best time to go to Ethiopia depends on what you are planning to do when you get there. Ethiopia is "the land of 13 months of sunshine", with a rainy season from June to September. The predominant climate type is tropical monsoon, with wide topographic-induced variation. As a highland country, Ethiopia has a climate which is generally considerably cooler than other regions at similar proximity to the Equator.
Most of the country's major cities are located at elevations of around 2,000 - 2,500 metres (6,600 - 8,200 ft) above sea level, including historic capitals such as Gondar and Axum, and Addis Ababa - the highest capital city in Africa at 2,400 meters (8,000 feet).
Ethiopia has three different climate zones according to elevation:
Ethiopia has a unique cuisine, one that will appeal particularly to vegans and those with a taste for spice, but tourist-orientated hotels also serve a varied selection of international dishes catering to less adventurous palates.
The main Ethiopia staple is injera, a type of foam-textured pancake that comes in three different cultured varieties: white, brown and red. The dough for injera is fermented for three days before it is cooked, hence the texture and a slightly sour taste.
The best injera is made with tef, a nutritious fiber-rich gluten-free germ that comprises 15% protein, and contains many times more calcium and iron than other grains. Unique to Ethiopia, tef is also the only grain to contain symbiotic yeast, which means that no other yeast needs to be added to prepare injera. A variety of different stew-like sauces are eaten with injera. These include tibs (spicy fried meat mixed with onions and peppers), shiro(spicy puréed chickpeas) and kai wot (a hot stew usually made with fish, beef, goat or chicken meat).
It is customary to eat with your hands in Ethiopia, and for a party of diners to eat from the same plate, tearing off pieces of injera and using them to scoop up the accompaniment.
Vegans are well catered for in Ethiopia, since the Orthodox Church recognises around 200 fasting days, when it is forbidden to eat any food containing animal products. Wednesday and Friday are always fasting days, as are the 40 days of Ethiopian Lent (most of March and April) and various other religious holidays. A common dish on fasting days is a kind of vegetable buffet called atkilt bayinetu, which comprises dollops of several vegan dishes placed on a plate of injera.
Bread – known locally as dabo – can usually be served in place of injera. Another popular staple, especially in the south, is enset (false banana). Most restaurants catering to tourists will also serve as selection of international dishes, known locally as ‘faranji food’.
Popular drinks include locally brewed beer called tella and a kind of honey wine know as tej. Several varieties of chilled lager-type bottled beer are also available, while red and white Rift Valley Wine is produced by the French-owned Castel Winery in Ziway. Locally bottled Ambo sparkling mineral water is available almost everywhere, along with several brands of still water. Addis Ababa has several wonderful cultural restaurants where a wide range of Ethiopian specialties is served in traditional tukul-style buildings, accompanied by colorful traditional music and dance.
Ethiopian Coffee
The origin and history of coffee dates back to the 10th century, and possibly earlier with a number of reports and legends surrounding its first use. The native (undomesticated) origin of coffee is thought to have been Ethiopia. Ethiopia, is the original home of the coffee (Arabica) plant. Kaffa, the province in the south-western highlands where they first blossomed, gave its name to coffee. The formal cultivation and use of coffee as a beverage began early in the 9th century. Prior to that, coffees trees grew wild in the forests of Kaffa, and may in the region were familiar with the berries and the drink. According to Ethiopia’s ancient history, an Abyssinian goatherd, Kaldi, who lived around AD 850, discovered coffee. He observed his goats prancing excitedly and bleating loudly after chewing the bright red berries that grew on some green bushes nearby.
Kaldi tried a few berries himself, and soon felt a sense of elation. He filled his pockets with the berries and ran home to announce his discovery. At his wife’s suggestion, he took the berries to the Monks in the monastery near Lake Tana, the source of the Blue Nile River. A lively culture of traditional hand-worked craftsmanship and a plethora of markets all over the country make Ethiopia a wonderful destination for connoisseurs of high quality traditional hand woven cloths and other handicrafts.
Ethiopia is renowned for its traditional crosses, which are usually made from wood, silver or other metals. Small crosses are worn as necklaces by individual Orthodox Christians, while larger ones are used for ceremonial purposes. Hundreds of designs are available, with different styles being associated with the main northern centres of Aksum, Lalibela or Gondar.
Locally woven white or off-white cotton cloths are typical of highland Ethiopia. The shama is the ubiquitous cloth of the male, wrapped around the heads and shoulders on cold mornings, while women use a more elaborate version with a colorful border to make dresses. The country’s finest weavers are the Dorze, who live in the highlands above Arba Minch, but their produce can also be bought at Addis Ababa’s Shiro Meda market.
Hand woven items such as scarves, shawls, table clothes and cotton towels designed for the export market can also be bought directly from some specialized workshops in Addis Ababa. Ethiopia is also recognised for its leather products and it is possible to find a range of good quality leather jackets and bags.

Meskel(The Finding Of The True Cross) Festival (27 September)

Now registered with UNESCO as an element of the Intangible Cultural Heritage of Humanity, Meskel (27 September) commemorates the alleged 4th century discovery of the True Cross on which Jesus was crucified. The centerpiece of this uniquely Ethiopian festival is the burning of a massive conical pyre called a Damera. The largest ceremony takes place in Addis Ababa’s Meskel Square, where hundreds of thousands of people gather to watch the colorfully dressed priests chant, pray and dance. The most historically poignant site to witness Meskel is Aksum’s Cathedral of Maryam Tsion.
Epiphanies(Timkat)

Festival the Ethiopian Orthodox equivalent to Epiphany, is celebrated at churches throughout the country on January 19. The best place to be during Timkat is Gondar, where the festivities culminate in a crowded and colorful afternoon re-enactment of the first baptism at the 17th century Fasil’s Pool, which is filled with water for the occasion.
Ethiopian Christmas(Gena or Ledet) (7 January)

The Ethiopian equivalent to Christmas, is preceded by an all-night vigil following 43 days of fasting that culminate. It is a family-oriented holiday, but in some areas it is marked by traditional dancing or a hockey-like game called Yegenna Chewata, supposedly played by the local shepherds on the night Jesus was born. It is traditional to eat the national dish doro wot (chicken stew) over Gena.
Eid-al-Fitr Festivals

The usual Islamic holidays are celebrated in Ethiopia, especially in and around Harar. At the end of the fasting month of Ramadan, the first day of the month of Shewal is celebrated as Eid-al-Fitr. This is followed by six-days of fasting. The 8th day of the month of Shewal is Shewal Eid – a special Harari cultural festival, consisting of 24 hours of celebrations.
Ethiopian New Year (11 September)

A more secular occasion is Enkutatash, or Ethiopian New Year (11 September), which falls on the date that the Queen of Sheba supposedly arrived back in Aksum after having visited King Solomon in Jerusalem. It is celebrated vigorously throughout the country by people of all faiths.
Fasika “Ethiopian Easter”

Marks a very important interest and enthusiasm among the Christian community in Ethiopia being the last major religious festival. Believers of the Ethiopian Orthodox church await its arrival with great eager passing through a long lent period of 55 days where no animal product of meat, milk or egg shall not be consumed during this period.
One week before Easter is called “HeMamat” a time to remember the suffering, beatings, wounds and pains of Jesus. In this week, people would not laugh, kiss, joke or make any fun but try to be on strict remembrance of those troubles of the Lord.
Two days before Easter is called day of crucify and this normally falls on Friday. On this day people spend the whole time bowing down before God as much as they can bow down depending on their strength, age and health issue to clean themselves from any sin. Some do 1000 times some even more.
On the eve of Easter almost all believers shall spend the night in the church doing their last religious sacrifices. Ceremonies in the church are so colorful and bygone that one would feel to be in time past at a Jew synagogue.
Priest & deacons according to their ranks with their colorful Levite looking costume will be chanting and praying all the night long. All the instruments used are very traditional ones such as the leather made drums and also the cross-shaped prayer sticks of priests.
A week after Easter is also a colorful festival called “Dagme Tinsae”, which marks the ascension of Jesus to heaven. This is also equally celebrated with the main Easter festival.
Easter is very much attractive to be attended in the historical church of the country but more usually spend in the rock-churches of Lalibela or the ancient & first church of St. Mary of Zion church in Axum.
Feast Of St Marry Or Hidar Tsion (Celebration of St. Mary’s day)

This is one of the most popular festivals in the country for The virgin & risqué and its most venerated of all religious figures in Ethiopia. About 33 days are annually dedicated to different celebrations in commemoration of Mary. “Hidar Zion” is associated with the presence of the Ark of the Covenant in Axum and the belief that the Ark itself is a symbol of her womb. Falling on 30th November every year, this festival is attended by thousands of people from foreign countries and all over Ethiopia, making it one of the most blissful annual pilgrimages in country, the “Blessed city of the Ethiopians”.

National Museum

Day 1: City tour in Addis Abeba
Arrive at bole international airport. You will be welcomed by the representatives and transfer you to your hotel. Depending on your arrival time, you will have a city tour in Addis Abeba. Day 2: Addis Ababa to Bahir Dar
Early in the morning, depart north to Bahir Dar via Debre Markos. On the way you will visit the Portuguese bridge, said to have been the first bridge in Ethiopia. Afterwards, you will pass through the spectacular Blue Nile Gorge. The gorge extends nearly 400km and reaches depths up to 1500m. Overnight in Bahir Dar (hotel)

In the morning you will take a boat trip on Lake Tana which is the largest lake in Ethiopia to visit the islands monasteries, such as Ura kidanemihiret and Azwa Mariam. Day 4: Bahir Dar to Gondar
After breakfast, continue north to Gondar. The four-hour drive will take you through rural villages, offering wonderful insight into the Amhara culture. After briefly settling in your hotel, explore the sites of Gondar, including a visit to the Royal Enclosure, with six castles and several other buildings. Additionally, visit Fasilidas’s Pool, still used for Timket celebrations today, and the Debre Birhan Selassie church, with the most famous ceiling in Ethiopia. Overnight in Gondar (hotel)
Day 5: Gondar to Semein Mountain
Today early in the morning you will drive to Semein Mountain via Debark city. The Semein Mountain is said to be the roof of Africa and has got a national park with a beautiful land scape where the walia Ibex, Semein red wolf and Gelada baboon all endemic to Ethiopia are found. Day 6: Sanka ber
You will start your trek around Buyit Ras for a 3-4 hour hike to Sankaber, which passes close to the escarpment edge. Nearing Sankaber, you will have beautiful views on both sides of the escarpment ridge and where you will likely see the endemic Gelada baboon. (Overnight camping in Sanka ber)
Day 7: Sanka ber to Lalibela
Early in the morning embark on a full day of driving to Lalibela. Here you will pass through several small villages, Proceed through this rural area for the stunning approach to the home of Ethiopia’s most prized destination – Lalibela. Overnight in Lalibela (hotel)
Day 8: Lalibela
In the morning, start your tour of the rock-hewn churches of Lalibela, visiting the Northwestern Cluster of churches - Bet Medhane Alem, Bet Maryam, Bet Meskel, Bet Danaghel, Bet Mikael & Bet Golgotha (entry not permitted for women). After lunch, continue with the Southeastern Cluster of churches – Bet Gabriel-Rufael, Bet Merkorios, Bet Amanual, and Bet Abba Libanos. Return driving to Addis via Debre Birhan. On the way you pass the Mezezo Escarpment, with a good chance to see the endemic gelada baboons. If today is a Sunday, you can stop in the town of Senbete to visit the lively market including the interesting camel market. Overnights: Addis Ababa (Hotel)
Day 11: Addis Ababa - Arbaminch
Early in the morning after breakfast drive to Arbaminch which means ‘forty springs’. On the way you will see the Tiya stelae. The site contains 36 monuments, including 32 carved stelae covered with symbols, most of which are difficult to decipher. Overnight in (lodge)
Day 12 Arbaminch – Jinka
In the morning you will take a boat trip on Chamo lake to visit corocodiles, hippos etc. Drive to Jinka across various ethnics like Tsemay and Bena. Continue driving to Jinka with a stop at Tsemay and Bena village. If it is Thursday; you will visit the spectacular Key Afer market where different Omo valley ethnic group meet in harmony. Day 13 Jinka- Mursi – Jinka
Drive from Jinka Excursion to the Mursi people via Mago National Park. These people are curious and famous in that the women wear geometrical lip plates in the slits of their lips and in the afternoon you will visit the Ari tribes whose women are known for selling pottery and wearing skirts made from banana trees called Enset. Tribe members wear a lot of jewellery and have many piercings in their ears. They wrap beads and bracelets around their arms and waist for decoration. Overnight: (In resort)
Day 14 Jinka - Turmi
Today you will drive to Turmi via different small villages and visit the beautiful and friendly Hamer tribs. The Hamer tribes are well known for their bull jumping and dancing ceremony. (Overnight: In Lodge)
Day 15 Turmi –Omorte-Turmi
Drive to Omorate for a visit of Dasench people with a wooden boat crossing the Omo River and if it is a market day, you will visit the Turmi market. Late in the afternoon drive back to Turmi.( Overnight in Lodge)

Day 17 Arbaminch- Hawassa
Early in the morning you will visit the dorze people who are well known cotton weavers, the Dorze tribe were once warriors. They are famous for their cotton woven cloths and beehive huts. They cultivate their own food and prevent erosion by terracing along the mountainside. In their farmlands, the Dorze will grow highland cereals. They also grow spices, vegetables; fruits and tobacco within their compound. The Dorze people wear colorful toga robes called shammas. They are very popular throughout Ethiopia.
